TO GATHER
2oz Dream Light
½ cup oat milk
OR homemade horchata:
1/2 cup uncooked white rice
1/2 cup raw, unsalted almonds or other nut
1 cinnamon stick
4 cups water
4 large pitted dates
TO MAKE
Put ingredients into a blender and blend until smooth. Pour into a jar and refrigerate overnight. The next morning, strain the mix to separate as much pulp from the rice milk as desired. Taste the mix and add 2-3 dates to sweeten or 1 cinnamon stick to spice up a sip of the milk and adjust to your preferred level of spicy or sweetness. If you wish to adjust, add the mix back into the blender. To make it a little sweeter blend in 2-3 more dates. To make it a little spicier blend in ½ - 1 more cinnamon stick. Drain the mix through a fine mesh strainer once more to separate the pulp. Keep horchata refrigerated in a sealed container, it will keep for up to 3-5 days. Add oat milk or homemade horchata to a pot and bring to a boil. Once it begins to froth, turn down to medium heat. Pour 2oz of Dream Light in a mug. Add the warm milk on top. Sprinkle with cinnamon. Garnish with a cinnamon stick or star anise.
